What do I need:
The cake
- 250 grams salted butter
- 200 ml milk
- 5 eggs (large)
- 360 grams caster sugar
- 1,5 tbsp vanilla sugar or 1,5 tsp vanilla extract
- 60 grams cacao powder
- 3 tsp baking powder
- 360 grams wheat flour
The frosting
- 150 grams salted butter
- 150 ml strong coffee
- 80 grams cacao
- 1,5 tbsp vanilla sugar or 1,5 tsp vanilla extract
- 300 grams icing sugar
- grated coconut (for topping)
How to
The cake
Preheat the oven to 175 degrees Celcius (top and bottom heat).
- Cover your oven pan with baking paper, oven pan about 30 x 40 cm.
- Melt the butter in a saucepan. Pour in the milk and then set the pan aside to cool.
- In a bowl, whisk the eggs and caster sugar on medium speed until very white and fluffy.
- Mix the vanilla sugar, cocoa, baking powder and flour in another bowl, then sift it into the egg whisk.
- Gently fold everything together into a smooth batter using a spatula.
- Add the butter milk as well and continue mixing until you have a smooth and fine batter without lumps.
- Pour the batter into the pan and bake it in the middle of the oven for about 20 minutes. Let the cake cool before spreading the frosting!
Frosting
- Melt the butter and let it cool.
- Then mix the butter with the rest of the ingredients into a smooth and spreadable batter.
- Spread the icing evenly over the cake.
- Garnish with coconut flakes.
- Allow the icing to set a little before cutting the cake into pieces and serving.
- Wrap the cake in plastic or store it in an airtight container before putting it in the fridge to keep it juicy and fresh for a long time!
